Three days into the challenge we are eating leftovers. But, that's okay because we had a great spinach salad to go with it. It also worked out well because we had a busy late afternoon with carpools and ballet. When we got home at 5:30, I was glad I had 3/4 of a leftover lasagna waiting for me in the fridge. I added a fresh spinach salad with it and it was yummy once again. This spinach salad has always been my favorite. It's sort of my go-to salad for any family gathering or casual dinner party. Time and time again, it receives tons of compliments. Everyone loves the dressing! Once again, this is another Mom recipe.
Grocery List:
- 1 bag of spinach
- 3 hard boiled eggs
- 8 slices of bacon (the Hormel microwave bacon saves time and is so easy to clean up)
- Options:
- Fresh sliced mushrooms
- 1 small onion, sliced
Probably already in your pantry (if not, add it to your list)
Salad Dressing ingredients:
- 1 cup vegetable oil
- 1/2 cup red wine vinegar
- 1/2 cup sugar
- 1/3 cup ketchup
- Dash of salt
Add spinach, sliced hard boiled eggs, crumbled cooked bacon (and additional ingredients if desired) to salad bowl. Whisk salad dressing ingredients together. Add desired amount of dressing to top of salad and toss.
(Note: this salad dressing recipe could be easily cut in half. Even by halving it, you'll have plenty. If you make the full amount, it can be stored in the refrigerator for a week or so.)
